I want to share with you a pie recipe. My granny always baked this pie for the birthdays of children and grandchildren. 

On top she made the name and a number in dough. It was better than any holiday cake with a candle for us. 

 

You can start a family tradition – bake home-made pastries for Independence day or birthdays, following ukrainian home recipes.

Poppy pie filling

Cover poppy seeds with water and cook for 10 minutes after boiling.

Drain the water.

Pour milk there and cook for 10 minutes after boiling again.

Drain the milk.

Cool the poppy and beat it with a blender.

Add your favorite jam and you can use it as a pie filling

Apple-walnut pie filling

Ingredients

Peel the apples and cut them into cubes. Add sugar, jam, cinnamon and chopped nuts. Stir.

Use as a filling for a pie.

Method of cooking

Let’s start with the base. Dissolve the yeast in 150 gr of barely warm milk. Add 120 gr of flour from the total amount. Stir, cover with food film and leave to rest for 30 minutes.

In the bowl of a mixer or a large bowl for manual mixing, sift the rest of the flour, add sugar, salt, honey.
Add the eggs beaten with a fork, the rest of the milk and the yeast mix we prepared before.

Knead the dough until the ingredients are combined. Gradually stir in the cold butter.
The dough has to be elastic and not stick to hands and bowl surface. It is advisable not to add flour, just dust the surface.

Cover with food film, and towel, and leave to rest for 1.5-2 hours.

Transfer the dough to the work surface. Use a knife to divide the dough.

Roll out half of the dough and place it in a 30 cm diameter mold, forming the bottom and sides.

Spread the poppy seed filling.

Cut a small part of the dough from the remaining half. Roll out a circle to cover the poppy filling.

Spread the apple-nut filling.

Use the rest of the dough to make the top of the pie. Make a mesh or other patterns. I used a rolling pin for the dough. They can make a beautiful grid on a pie.

Cover the pie and let it rise for another 30 minutes.
Grease the yolk + 20 gr of milk.

Bake at 180°C for 40-50 minutes. Cool down completely.
