Traditional German pastries are becoming more and more popular in Ukraine and are even fixed on the Christmas tables of Ukrainians. So, for example, it is not surprising that stollens became popular in our country. They are tasty, fragrant and they are stored for a very long time.
I chose the best version of stolen for us – cheese or Quark Stollen. Like the classic version of stollen, cheese can be stored from 1 to 4 weeks. Over time, it will only reveal its taste. But, unlike the classic one, it is much easier to bake.
Cheese stollen is more like a Christmas cake, it is unleavened and therefore softer than the classic version.

Preparation of dried fruits
- 300 g raisins
- 100 g dried apricots cut into cubes
- 100 g cranberries
- 100 g dark rum
- Juice of half an orange
- Orange peel
- 50 g Limoncello
- 50 g Amaretto

Method of cooking
Cover with film and leave in the refrigerator until baking.
Dough for stollen
All ingredients should be at room temperature. The best is to lay everything out in the evening and bake in the morning.
- 250 g 82% unsalted butter
- 250 g powdered sugar
- 2 eggs
- 2 tsp vanilla paste
- Zest of one lemon
- 200 g soft cheese
- 600 g flour
- 25 g baking powder
- 0.5 tsp cinnamon
- 0.5 tsp nutmeg
Beat the butter with a mixer with powdered sugar to a fluffy white consistency.
Stir the eggs with a fork, add vanilla paste, lemon or orange peel to the eggs.
Gradually pour the eggs into the butter mixture.
Add soft cheese, beat at low revolutions of the mixer.
Separately sift flour, baking powder, nutmeg, cinnamon.
Gradually add the dry ingredients to the butter-egg mixture.
Put the dried fruits in a colander in advance. Add them to the dough and mix well.
Add 300 g of flour and stir.
Put the dough on the table. With the help of flour, form 4 stollens of 500-550 grams each.

Place on parchment and bake for 40 minutes at 180 degrees. Do not forget to monitor the oven.
After baking
Remove from the oven, leave to cool for 1-2 hours. Brush with melted butter or Noiset butter, sprinkle with powdered sugar.
One stollen, for a test, it is better to cut on the second day after baking. Wrap the other three in foil and cling film, and leave in a dark place to ripen. The best taste of stollen takes place after 2 weeks.
