I’d like you to cook this pizza on weekend or on a holiday when you’re expecting a visit. You can keep to yourself that it’s only with vegetables. This pizza is so delicious that not a soul will notice salami absence.
Besides, it has no sauce, and it’s a positive feature for this pizza variant. Thin and crunchy base, juicy vegetables and lots of cheese.

- 1 big red onion
- 8 cherry tomatoes cut in halves
- 200 gr suluguni cheese
- 50 gr grated parmesan
- Olive oil
- Dry oregano
You’ll find the baking method in “Bruschetta with roasted pepper” recipe
Method of cooking
Pour warm water in a bowl, add dry yeast, and mix till dissolved.
Add olive oil, sugar, salt, and all-purpose flour. Knead the pizza dough. Cover with food film and a towel on top, and let it rise in a warm place for 1.5 hours.
Divide the dough into two parts and roll it out or stretch with your hands for two pizza bases.
Put grated or chopped Suluguni on the base, then sprinkle with Parmesan.
Place cut stalks of asparagus, cherry tomatoes, roasted pepper, and red onion chopped in rings on top of the cheese. Sprinkle with olive oil mixed with oregano.
Bake at 200 °C for 20-25 minutes. Watch close the process, as various ovens have different voltage, so baking time depends on this.
