Bruschettas with roasted pepper and sardines

I got taste for canned sardines in Portugal. It’s their national dish and everyone buys it as a souvenir for sure. My preference is for sardines in olive oil with lemon. I used this ones for bruschettas. 

 

In Ukraine you can buy spanich canned sardines and cook delicious bruschettas with rosted pepper.

Method

First you need to roast the pepper, as it will take more time. You can bake it beforehand and marinate it before use.

Wash the pepper, wrap it in foil and bake it in the oven at 200°C for about 40 minutes-1 hour. After 20 minutes, unwrap the foil and bake until the skin turns black. Then wrap in foil again and let the peppers cool.

Peel the pepper, cut into long strips and marinate in olive oil, vinegar, salt, pepper, add herbs.

Toast the bread on a pan or on a grill.

Put marinated pepper, sardines on top, decorate with cheese and green onion.

You can use roasted pepper not only with bruschetta. It is a great topping for pizzaor you can add it to a salad or pasta.
