Potato pancakes with cabbage
We often cooked potato pancakes with cabbage at home. Here in the Chernihiv region, they were still called potato pies. It’s not a quick process, but it’s worth it. The dish is simple, made from available ingredients and so tasty.
You can replace the cabbage with mushrooms or meat, it will also be very tasty.

Method of cooking
Peel the potatoes and boil them in salted water until ready. Drain the water and knead the potatoes well so that there are no lumps. Cool down.
Prepare the filling for potato pancakes. Fry cabbage cut into thin strips and grated carrots in olive or sunflower oil. Season with salt and pepper, and add half a glass of water so that the vegetables do not burn at the beginning of cooking.
Fry until all the liquid evaporates, and the vegetables acquire a light golden color. Fry until golden.
Add flour to the cooled potatoes. You may need more flour than stated in the recipe. Mix the potatoes with flour, divide into equal parts of 40-50 grams each and roll into balls.
Crush each ball in your hands, put the filling inside and pinch, dust your hands with flour periodically. You can form long or round potato pancakes.
Fry in olive or sunflower oil on both sides.
Serve with sour cream.
