Thai massaman curry soup

In this soup, I used the premade massaman curry soup base, which already contains all the main ingridients, herbs, spices, and pastes. This base is more fragrant than spicy because it contains cinnamon, cardamom, cloves and other interesting spices. I changed the recipe a bit to make it less spicy and added vegetables. 

 

This is the ingredients of the premade base for the soup: 

Coconut milk, massaman curry paste, shallots, chili pepper, salt, garlic, lemongrass, ginger, cardamom, coriander, cumin, kaffir-lime zest, nutmeg, tamarind, fish sauce, coconut sugar, shrimp paste.

Method of cooking

Dilute the contents of the package in 1 liter of water. Add chopped three large potatoes, one carrot. Boil it.

At the same time, cook the rice. I take it in bags, so it turns out crumbly.

Steam broccoli al dente so it still keeps it’s beautiful green color.

Shrimps, the amount can be chosen according to your taste, I had 300 g, peel them.
Leave a few pieces for decoration. Fry the shrimps for decoration in a frying pan, previously season them with lemon juice, salt, and pepper.

When the vegetables in the soup are almost ready, add the shrimp and two diced tomatoes, season with salt, black pepper, and a bay leaf. Cook until everything is cooked through.

Put two tablespoons of rice into the soup bowls, pour the soup, a few pieces of broccoli, put the shrimp that we set aside for decoration, fresh cilantro, green onions, and sesame seeds in the center. 

 

At each step of preparation, taste the soup and season to your own taste. Shrimp can be substituted for chicken, but add it with vegetables so that it cooks in time.
