French galettes is an exquisite pastry from shortbread. The filling may be all different – salted or sweet. You can serve the galette as dessert when having a visit, or take it to a picnick, or eat as a snack.
Galette is very simple in cooking and does not require many ingredients. In Ukraine galettes become popular during fruit and berry season. One can often see them in cafe menues where they are served with ice-cream or whipped cream.

Method of cooking

All ingredients, except water, turn into crumbs in a food processor with knives or rub butter on a grater into flour, and then grind into crumbs with your hands.

Add water and quickly knead an elastic dough.

Wrap the dough in food film and leave in the fridge for 1 hour or more.

Divide the plums in halves, remove the stones, and then cut each half in a half.

Add sugar and cornstarch to the plums, stir.

Almond cream (optional)

80 gr of each butter, sugar and almond flour. Grind and add 20 gr of wheat flour and 1 egg. Mix everything well.

Divide the dough in two parts. Roll out each part in a circle. Spread half of the cream, leave edges of 2-3 cm. Spread the plums on the cream in a circle.

Wrap the edges, brush them with egg yolk and milk, and sprinkle with brown sugar.

Bake at 180 °C till beautiful ruddy color, about 30-40 minutes.

Bake every galette separately. Let it cool 30 minutes and you can serve it.
