Rack of lamb is an exquisite dish that you can serve one evening on a special occasion. Caramelized grilled apricots is a perfect side dish for such meat. Sweet apricots add freshness and unimaginable fragrance to this dish. And just look at the color and serving! 

 

I grilled everything, but you can also bake or stew the meat with apricots and potatoes in the oven.

Method

Get the meat ready. Cut the exessive fat, then cut in pieces, you can also take out the bones.

Put the meat in a deep bowl, add olive oil, salt, pepper,  tarragon or rosemary, and garlic. Close with a lid and put in the fridge for 2 hours.

Cut the apricots in halves, take the pits and grill. You can add sprigs of thyme.

Grill the eggplant too. Brush with oil and season beforehand.

Grill the marinated lamb on both sides till it gets really brown. Then cook to readiness in the oven for 15 minutes or cover with a lid and grill on low heat directly on the pan. Cooking time may differ, depending on the size of the meat you use.

Place the eggplants on a serving dish, then the meat, apricots, yogurt sauce, cilantro, and walnuts.
