Method of cooking
First, you need to flavor the cream with lavender. There are two ways to do this. The first is to pour the cream into a pan, heat it a little and pour 1 teaspoon of lavender flowers. Cover and leave for 1-2 hours.
The second is to pour the cream, add 1 teaspoon of lavender flowers, cover and leave in the refrigerator overnight. Choose which one you like more.
Soak gelatin in cold water.
After the cream is flavored, strain and squeeze out the flowers. Add milk and honey to the cream, and bring the mixture to a boil, but do not boil. Add gelatin mass, and mix well with a whisk.
Pour into molds. I have silicone cylinder molds, 6 pieces of about 100 g each. You can use ice cream cups or cups for desserts. Leave in the refrigerator to stabilize.
Serve with caramelized apricots. Put 1 tbsp of butter and 2 tbsp of brown sugar into the pan. Divide the apricots into halves and place them cut side down. Caramelize or fry on maximum heat until caramel color, but the apricots should keep their shape. It is better to take half-ripe fruits. During frying, add thyme or a sprig of lavender.
