Lemon curd
Curd is an English cream based on fruit juice. It is prepared from egg yolks, butter, sugar and juice instead of milk. If it is a lemon curd, then we take lemon juice and zest accordingly to give it even more flavor. You can use orange, lime, grapefruit or berry juice.
Corn starch is added to the curd for a thicker consistency.
The most common in desserts is lemon curd. It adds a light acidity and thus balances the taste of the dish.
Ingredients
- Juice and zest of two large lemons
- 4 egg yolks
- 80 gr sugar
- 50 gr butter
- 1 tsp corn starch

Method
When the temperature of the cream reaches 80 degrees, remove it from the stove and continue stirring with a whisk.
Strain through a sieve, cover with food film in contact.
Store in the fridge for up to two weeks.
Curds are used as fillings for cupcakes, cakes, buns, donuts, Pavlova desserts. Served for breakfast with pancakes, cheesecakes, toasts, puddings.
