Eggplant rolls with soft ricotta cheese are a perfect appetizer or even a main course.
For example, for the holiday, you can prepare such rolls with different flavors. Replace the garlic in the filling with sun-dried tomatoes, fresh herbs or baked bell pepper to get tasty variations.
Ingredients
- 3 eggplants
- 300 gr ricotta cheese
- 1 clove of garlic
- 3-4 sprigs of dill or parsley
- 2 tbsp Greek yogurt
- 1 tsp tahini paste
- Salt and pepper to taste
- Olive oil for frying
- Greens and sesame seeds for decoration
