Eggplant rolls with soft ricotta cheese are a perfect appetizer or even a main course.


For example, for the holiday, you can prepare such rolls with different flavors. Replace the garlic in the filling with sun-dried tomatoes, fresh herbs or baked bell pepper to get tasty variations.

Method of cooking

Wash the eggplants. Cut them into thin slices.

Sprinkle with olive oil, add salt and pepper.

 Fry the eggplants in a grill pan or bake in the oven on a baking sheet lined with baking parchment.

Prepare the filling for rolls.

Mash the ricotta cheese with a fork. Add yogurt, tahini paste, chopped dill, salt, and pepper to the cheese. Stir everything well.

Wrap the filling in cooled eggplant slices.

Decorate the dish with greens and sesame seeds.
