Varenyki  is one of the popular Ukrainian dishes. There are many fillings, both sweet and salty. Varenyki with cherries, sweet cheese, and berries are usually served for breakfast. But varenyki with potatoes, meat, cabbage, usually served as a second course for lunch or dinner. 

 

Varenyki can be frozen, which is very convenient. It is better to make varenyki with the whole family, it is much more fun to make together. In this recipe, I used sweet potato to contrast the sweet and salty flavors. 

 

You can make it with regular potatoes, it will also be very tasty.

Preparation

Sift flour into a large bowl and add salt.

Bring water and butter to a boil in a saucepan.

Pour in flour and stir with a wooden spoon. Knead the dough until elastic, cover and let it rest for 30 minutes.

Roll out the dough thinly, cut circles with a diameter of 6 cm.

Bake the sweet potato in the oven, wrapped in foil. Cool, scoop out the middle and mash with a fork.

Season with salt, pepper, paprika (I don’t add dried herbs to leave a beautiful look of the varenyki when cut).

Dumplings can be cooked immediately, or frozen. Cook after dumplings raised to the top of the water for 3-4 minutes.

Serve with fried bacon and onions. Sweet potatoes are sweet, so it’s great when there’s a contrast of flavors and you add something salty on top. 

Sprinkle with fresh herbs.
