Method of cooking


Dissolve the dry yeast in warm water, mix well, add flour, leave to rise in a warm place for 15 minutes.


Dissolve the yeast with warm water.

Pour flour and salt into a large bowl.

Mix eggs with sugar and pour into the flour.

Add melted butter in there too.

Then add the dissolved in water yeast, and the pre-ferment.

Start kneading the dough. You can do it in a planetary mixer, with a hook nozzle.


Knead for 8-10 minutes, then cover with food film and leave to rise for 1.5 hours.


Grease the baking tray with oil.

Place the dough on a floured surface and knead a little again.

Divide the dough into 30 equal balls (it is better to use a scale), place them on a baking tray, cover with a towel and let rise for 30 minutes.

Heat the fryer to 180°C and carefully fry the doughnuts on both sides to a beautiful ruddy color.

Adjust the temperature so that the doughnuts do not turn dark too quickly.

Place them first on paper towels, and then in a bowl with powdered sugar and cinnamon.

Doughnuts can be made with filling. With the help of a pastry bag with a nozzle, you can fill the doughnuts with jam or Nutella.
