Method of cooking

Cut the prepared eggplant into cubes, place it on a baking sheet. Add olive oil, dried oregano, salt, pepper, smoked paprika. Bake in convection oven at 180 degrees C until golden brown. Do not overbake so that the cubes rodent loose their shape. Stir periodically. Cool and use in Tacos.

Put sweet and sour sauce, eggplant, roasted pepper, canned corn, greens, and feta cheese in the prepared tortillas.
