Cook a tasty and fragrant main dish for a festive meal. Use fresh herbs – rosemary, thyme, sage. Pork goes well with garlic, mushrooms, sun-dried tomatoes, and orange zest.
Bake some pink grapes for a side dish – it will give you a new taste experience. Don’t worry if the main dish looks too big, you can slice such a roll the next day, grill it and serve it with potato puree.
You can cook any meat roll using this recipe.
Ingredients
- 1.5-2 kg of thin pork breast with skin
- 100 gr mushrooms
- 3 sprigs of rosemary
- 1 sprig of sage
- 3 sprigs of thyme
- 5 pcs. sun-dried tomatoes
- 3 cloves of garlic
- 1 orange
- Olive oil with truffle or regular
- Salt and pepper to taste
- 1 tbsp. butter
- 1 kg of pink grapes
- 2 pcs. tangerines
- Sage leaves

Method of cooking
Wash the meat, dry with a paper towel. Make incisions from the inside. Rub with salt and pepper, and drizzle with olive oil.
Prepare the filling for the roll.
Wash the mushrooms and cut them into small cubes. Place on a heated pan with olive oil. Fry, adding a chopped clove of garlic, butter, and a sprig of thyme.
Fry the mushrooms till rich golden color.
Place the mushroom filling, finely chopped sun-dried tomatoes, garlic, rosemary, and thyme on the prepared meat.
Wrap a tight roll, tie with meat thread.
Put the roll in a baking dish on top of a sliced orange.
Leave in the fridge for 3-4 hours to rest.
Cover with foil, bake for 3 hours at 180°C.
Then remove the foil, pour the juice that has formed on the bottom of the mold over the roll. Continue baking till golden brown color for another hour.
Keep an eye on the meat – it may take less or more time to cook.
Wash the grapes, sprinkle with olive oil, add sage leaves, pepper.
Bake the grapes for 20 minutes at 180°C.
Slice the pork into pieces, put it on a plate with grapes. Optionally, decorate with fresh herbs, grilled tangerines.
