Have you noticed that our grandmothers decorated confectionery with ornaments that remind of embroidery? Birds, flowers, leaves, braids of dough – all of this has been carefully placed on top of home-made confectionery, transforming a regular bun into a work of art. 

 

Ukrainian vyshyvanka (a traditional embroidered shirt) and Ukrainian confectionery have the same aim: to keep the history of every region of Ukraine and keep the bond between generations. 

Ingredients for buns

You can choose the filling you like: poppy seeds with apples or nuts, carameled apples, or fillings with nuts or cottage cheese.

Method of cooking

Make the pre-ferment. Dissolve yeast in warm milk. Add 30 gr of sugar from the total amount and 150 gr of all-purpose flour. Stir well. Cover the mix with a towel and let it rise in a warm place for 30 minutes.

Add eggs, sugar, and butter to the mixture. You can flavor the dough with lemon, orange or vanilla peel.

Gradually add flour and knead the dough. You may need more flour if you do the kneading by hand.

Transfer the dough to a large bowl. Cover with food film and a towel on top. Leave the dough to rise in a warm place for 1-1.5 hours.

Cut the apples into cubes and caramelize them in a pan. Melt butter, add chopped apples and sugar. Cook till beautiful caramel color. Add cinnamon.

Prepare two molds, line them with baking parchment. The size of the molds I used is 25/10 cm.

Divide the dough into two parts. Form two braided buns.

It is necessary to roll out each part of the dough into a rectangle, leaving space on top for the filling. And cut the rest of the dough to the bottom into thin strips. Make 6 braids from the dough strips. Fix the filling in the dough and turn the roll so that the seam is at the bottom. Place the buns into molds.

Cover the buns with a towel, let them rise for 30 minutes before baking. Grease the top with a mixture of an egg yolk + 15 gr of milk, shake with poppy seeds.

Bake in an oven heated to 180°C for 30-40 minutes. If necessary, cover the top with parchment.
