Baked duck is a traditional dish for the festive table. The flavor combinations used in this recipe ensure a harmonious and balanced result.

 

Citrus fruits, oranges in particular, give the meat a homogenous color and soften its rich flavor. Fresh herbs — thyme, rosemary and sage — enhance the aroma of the dish. Inside the duck we put one sprig of each herb along with the oranges.

Cooking method

Wash the duck and dry it well with a paper towel.

Rub it with salt and pepper, including on the inside.

Mix olive oil, juice of half an orange, honey, soy sauce and grease the duck well.

Put half a sliced orange and fresh herbs inside.

The air flow inside the duck should be unobstructed, so do not use too much stuffing.

Leave the stuffed duck in the refrigerator to marinate for 2 hours.

You can bake the duck in an oven bag or in a special baking tray with a rack inside – this way the fat from the duck will drip down onto the baking tray.

Place a sliced orange on the rack or on the bottom of the tray.

Place the duck on top of the oranges and pin the wings with toothpicks.

Cover the dish with foil and place in a preheated to 190°C oven.

Depending on the weight of the duck, bake it for up to 2 hours.

Remove the foil, brush the duck with the juices that formed on the bottom of the pan or with the marinade, and bake for another 30 minutes. You can turn on the convection for a while, but keep an eye on the dish.

Brush the hot duck with olive oil to give it some shine and serve with various herbs, sliced orange, or other festive decorations. You can cook a side dish separately.
