You always want to have a quick and easy pie recipe on hand, especially during berry and fruit season.
Although it states that it’s a raspberry pie, you can easily substitute raspberries with strawberries, blueberries, blackberries, or apricots for the filling.
Enjoy aromatic homemade pastries prepared by yourself.
Ingredients
- 500 gr raspberries
- 170 gr powdered sugar
- Zest of one lemon
- 100 gr butter
- 40 gr vegetable oil
- 160 gr milk
- 3 eggs
- 280 gr all-purpose flour
- 10 gr baking powder
- 3 gr baking soda
- Powdered sugar for decoration

Method of cooking
Prepare a baking dish 22-24 cm in diameter. It can be a biscuit ring wrapped in foil as well.
Melt the butter.
Sift flour together with baking powder and soda.
Add lemon zest to the eggs, you can add vanilla, powdered sugar. Whip only until all the ingredients are combined.
Pour milk, oil and butter into the eggas misxture, whip again.
Gradually add the dry ingredients. Stir until all is combined.
Pour most of the pie mixture into the mold, put 400 gr of raspberries on the dough. Pour the rest of the dough on top and put the rest of the raspberries on top of the pie.
Bake the pie in an oven heated to 180°C from 40 minutes to 1 hour. If necessary, cover the top of the pie with foil. Check for readiness with a wooden skewer.
Shake the cooled pie well with powdered sugar.
