Chicken curry with coconut milk is a very popular Indian dish that you can easily make at home. I took premade curry paste so I do not have to collect all the spices separately, it is very convenient. You can choose any meat or leave only vegetables altogether, increasing their quantity.
Red curry can be served with pita bread and yogurt, which neutralizes the spiciness.
Ingredients
- 300 g of chicken meat, I take chicken thighs and cut them
- 2 tsp Cajun seasoning
- Salt and pepper
- 1 tsp paprika
- 1 tsp oregano
- 2 cloves of garlic
Method of cooking
Pre-cut and fry pieces of chicken in Cajun seasoning, add salt, pepper, paprika, oregano, and garlic to them.

The method of cooking curry
- 2 bags of rice (75 g each)
- 1 onion
- olive oil
- 1 can of tomatoes in their own juice
- 2 packets of red curry paste
- 1 carrot
- Half of the whole cauliflower
- 1 tsp smoked paprika
- salt
- 150 g of coconut milk or cream
- Half of the can of canned chickpeas
- Fresh herbs
Heat olive oil in a pan, add chopped onion, curry paste, fry for 5 minutes and add the rest of the vegetables.
Cut carrots and cauliflower into same pieces, preferably cubes.
Fry everything, add one can of tomatoes in their own juice.
Add pieces of fried chicken. Add salt, also you can add dried herbs or smoked paprika.
Simmer until the vegetables become semi-soft.
Add coconut milk or cream, canned chickpeas. Simmer until ready. The sauce should become thick.
Turn off the heat and add chopped fresh herbs.
8. Serve with rice.
