Preparation
Mix all the dry ingredients in the bowl of a mixer, then add the yeast. Add an egg to the milk and stir with a fork.
Turn on the mixer with the hook attachment and gradually pour in the milk and egg mixture.
When the dough well combined, we begin to add butter cut into cubes.
Keep kneading the dough until it is no longer sticking to the bowl, becomes elastic, approximately 10-15 minutes on the first speed.
Cover with a towel and leave for 1.5 hours at room temperature.
We form buns of 80 g each, put them on a baking sheet lined with the parchment paper. Let it sit for another 30 minutes.
Brush with the mixture of egg yolk and milk with a brush, sprinkle with poppy seeds. Bake at 160 degrees C for 15 minutes + 5 minutes with convection. (Baking time depends on the oven).
If you don’t have planetary mixer, you can knead with a hand mixer and continue with your hands. Do not add all the flour at once, leave half of it to add after the butter.
