Carrot is very juicy and sweet. It is so tasty as the process of caramelizations happens due to natural sugars in carrots.

 

I added a few ingredients in order to vary the taste and improve the texture. 

You can eat this carrots as snack or as side dish to fish, meat, or other main courses.

Mehod

Wash and peel the carrots leaving the green leaf part.

Heat the olive oil on the pan, then lay out the carrots. Add crushed garlic cloves, sprigs of thyme, salt, juice and peel of half an ornage.

Cook the carrots on medium heat till cooked, better when it gets al dente. It normally takes up to 20 min.

10 min till cooked, add the raisins.

Serve the carrots on a plate, pour honey on top with pieces of feta cheese.
