Once I was offered some craft pasta with baked paprika. It had a very appetizing yellow color. I thought that I might highlight pasta taste and cook a nice-looking dish.
Sweet pumpkin, paprika, fragrant herbs, salty bacon, and Parmesan cheese: this is the taste variety in a simple dish for lunch or dinner.
You can skip bacon and serve the dish with Parmesan only.
Ingredients
- 300 gr pumpkin
- 1 onion
- 4 cloves of garlic
- 2 sprigs of thyme
- 1 tsp smoked paprika
- Salt and pepper to taste
- Olive oil
- 100 gr cream 33% fat
- 500 gr tagliatelle pasta
- 150 gr bacon
- Parmesan
- Cilantro for decoration

Method of cooking
To begin with, you need to make pumpkin sauce.
Peel the pumpkin, cut it into cubes, put it on a baking tray lined with baking parchment or in a baking dish.
Sprinkle the pumpkin with olive oil, add salt, pepper, paprika, onion cut into four pieces, crushed garlic cloves, and thyme.
Bake at 180°C until a beautiful ruddy color. Cool down.
Put all the ingredients for the sauce in a blender bowl, add the cream and beat until a homogenous paste is formed.
Fry the bacon separately, you can skip it and serve the pasta with sauce and cheese.
Boil the pasta until al dente. Add sauce, stir well.
Place pasta on serving plates, add crispy bacon, sprinkle with Parmesan and fresh cilantro.
