The zucchini season is very long, they are the tastiest and most aromatic when they are in season. You can prepare a zucchini pancake as a base, and then use your fantasy. 

 

I chose lightly smoked trout because it has a light smoke flavor and goes well with young zucchini. You can use pancetta, bacon or a few pieces of prosciutto.

Method of cooking

First, prepare the zucchini pancake. Grate the zucchini, squeeze out all the excess liquid and transfer to a bowl. 

 

Add an egg, finely chopped green onion and two springs of dill. Season and add flour. Mix everything well.

Fry the pancake in olive oil on both sides. Place on a serving plate. Place fresh mixed salad, pieces of trout and poached egg on top.
