If you have a good ceramic or metal baking tray, you can serve a hot dish right in there. Your guests will be thrilled with such serving. Especially if you add a variety of vegetables to the fish, which can be taken directly from the tray.
Fish, herbs, olive oil and season vegetables, put everything in the oven and your dinner is ready, you just need to wait a little.
Ingredients
- 2 dorado fishes
- Salt and pepper to taste
- 1 lemon
- Olive oil
- 2 sprigs of thyme
- 2 tsp seasoning for fish (marjoram, basil, dried onion, paprika)
- 1 onion
- 1 zucchini
- 2 carrots
- 3-4 cherry tomatoes
- Fresh rosemary and green onions to serve

Method
Clean, wash and season the fish with salt, pepper, olive oil, lemon juice, seasoning for fish, also put a sprig of thyme and a slice of lemon inside (then your fish will get very fragrant).
Place dorado on a vegetable pillow. Then the vegetables will pass their aromas during cooking to the fish.
Bake at 180 °C for 30-40 minutes without covering the top of the baking tray, we need the fish and vegetables get nicely brown.
Before serving, sprinkle everything with lemon juice, add finely chopped parsley, rosemary, and green onions on top. Serve directly in the tray in which it was cooked, with a lot of delicious juice at the bottom (it will play the sauce role).
Optionally you can cook potatoes and fresh salad too, as side dish.
