Baked duck thighs with vegetables
This is a perfect dish to have a delicious supper. Add a glass of red wine, if it is a weekend or holiday.
You can marinate duck thight beforehand, even a day before you want to cook them.
Later on you’ll just need to place everything on a baking tray and bake. While the thighs are in the oven, cook the salad.

Marinate duck thighs, you can do this overnight before cooking.
Cook vegetables, if the beetroot is not young, pre-boil until half-cooked.
Place the vegetables on a baking tray, season, pour olive oil, cut the garlic in half.
Place duck thighs on top of the vegetables. Bake at 180°C for 1 hour. If the vegetables were cooked earlier, get them out of the oven but continue cooking the duck.
Place on a serving dish and sprinkle with greens.
