Baked duck thighs with vegetables

This is a perfect dish to have a delicious supper. Add a glass of red wine, if it is a weekend or holiday.
You can marinate duck thight beforehand, even a day before you want to cook them.
Later on you’ll just need to place everything on a baking tray and bake. While the thighs are in the oven, cook the salad.
Ingredients
- 2 duck thighs
- 5-6 carrots
- 3 small beets, if not young, pre-boil
- 1 head of garlic
- 3 sprigs of thyme
- Salt, pepper to taste
- Olive oil
- 1 tsp balsamic vinegar
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 tsp dried Provencal herbs
- 1 tsp Cajun seasoning
- A few drops of Tabasco sauce
