I give you a recipe for 2 persons, but to tell you the truth, I ate whole two portions by myself. I just love such ready solutions for lunch or dinner. When everything is on a single plate and harmoniously combined.
May-June is the season of new potatoes and asparagus. Order asparagus, in Ukraine the freshest vegetable will be sent to you directly from the field.
Ingredients
- 400 gr new potatoes
- 8 stalks of asparagus
- 2 fresh cucumbers
- 2 boiled eggs
- Dill and green onions for serving
- 100 gr Greek yogurt
- 1 tbsp olive oil
- 2-3 sun-dried tomatoes (optional)
- Salt to taste
