Meatloaf has become one of the main dishes on the holiday table due to its versatility. It can be filled with any filling to your taste: mushrooms, spinach, cheese, or anything else you like.
The meatloaf recipe is not only delicious, but also easy to make. It’s perfect for a holiday meal when you want something rich and original. The spinach adds freshness, and the dried apricots perfectly balance the flavor of the meat. Once you try this meatloaf, it will definitely become your favorite recipe for family gatherings.
Ingredients
- 1 kg of ground turkey
- 2 eggs
- 100 gr of breadcrumbs
- Salt and pepper to taste
- 250 gr of mushrooms
- 150 gr of spinach
- 2 cloves of garlic
- 50 gr of dried apricots
- Olive oil
For a golden crust
- 1 tbsp. of honey
- 2 tsp. of mustard
- 3 tbsp. of soy sauce
- You can add a little paprika

Cooking method
Add eggs, breadcrumbs and spices to the minced meat, mix all well.
Peel the mushrooms, chop and fry them in olive oil. Remove the fried mushrooms from the pan.
Add garlic to the olive oil, fry for a minute, then remove it. Add spinach and fry until the liquid evaporates so that it retains its color.
Place foil and baking parchment on a baking tray. Brush the parchment with oil. Spread the minced meat into a thin rectangle on the parchment.
Spread the mushrooms and spinach on the minced meat.
Place chopped dried apricots on one edge of the minced meat.
Roll the meat into a log using the parchment, pressing lightly so that it holds the shape. The roll can easily unroll while raw, so you can roll again if it doesn’t hold the first time.
Wrap the roll with the parchment in foil and seal the edges tightly.
Bake at 180°C for 50 minutes.
Remove from the oven, unfold from foil and parchment.
Brush the hot meatloaf with browning mix or ready-made barbecue sauce.
Bake for another 30 minutes.
Cool down and cut into pieces to serve.
