Don’t tell it’s trite until you read through the recipe. I used a stewed pumpkin instead of the classical boiled one. The taste is very rich and intense. And the combination of nutmeg and vanilla is just perfect. Corn grits added a softer and more silky texture.

- 150 gr corn grits
- Milk 1:4
- 0.5 tsp vanilla paste
- 2 tbsp sugar
- 30 gr butter
Method of cooking
You need to pour the corn grits into a glass, see how much space it takes, and then measure the milk quantity with the same glass: 1 part of corn grits and 4 parts of milk.
Cook, stirring constantly, for about 15 minutes.
Add vanilla paste or vanilla extract. If you measure it with a dispenser, then one push and 2 tbsp of sugar and butter.
When you add vanilla, you will feel this incredible aroma and understand that it is a perfect combination with nutmeg, pumpkin and the taste of corn grits.
When the porridge is almost cooked, I add the blended pumpkin, mix everything well and let it boil. If the porridge is very thick, you can add milk at this stage.
Remove from the fire, cover with a lid and it’s ready.
Pumpkin porridge can be served with caramelized apples, pears, peaches.
Also add pumpkin seeds, honey, jam and whatever you like.
