Pumpkin porridge with corn grits

Don’t tell it’s trite until you read through the recipe. I used a stewed pumpkin instead of the classical boiled one. The taste is very rich and intense. And the combination of nutmeg and vanilla is just perfect. Corn grits added a softer and more silky texture.

Method of cooking

Peel and cut the pumpkin into cubes.

Melt the butter in a pan, put the pumpkin inside.

Grate nutmeg and add brown sugar into the pan.

Cover with a lid and keep on medium fire until the pumpkin is fully cooked. Stir periodically. Cool down.

Blend with a blender.

Corn porridge


Method of cooking

You need to pour the corn grits into a glass, see how much space it takes, and then measure the milk quantity with the same glass: 1 part of corn grits and 4 parts of milk.

Cook, stirring constantly, for about 15 minutes.

Add vanilla paste or vanilla extract. If you measure it with a dispenser, then one push and 2 tbsp of sugar and butter.


When you add vanilla, you will feel this incredible aroma and understand that it is a perfect combination with nutmeg, pumpkin and the taste of corn grits.

When the porridge is almost cooked, I add the blended pumpkin, mix everything well and let it boil. If the porridge is very thick, you can add milk at this stage.

Remove from the fire, cover with a lid and it’s ready.

Pumpkin porridge can be served with caramelized apples, pears, peaches.

Also add pumpkin seeds, honey, jam and whatever you like.

Method of cooking

Pour water with sugar in a pan. As soon as the sugar has melted, immediately put the chopped fruits inside and caramelize on both sides until they become of a beautiful caramel color.

You can add a pinch of cinnamon optionally.
