- 150 gr Circassian cheese
- 1 egg
- thyme
- 1 large pear
- 100 gr Gorgonzola cheese
- 1 large white onion

Method of cooking
Take a 16 or 18 cm baking mold.
Lay out the filo dough, three pieces, grease each piece with melted butter. Beautifully form the edges of the pie.
Filling: Ricotta cheese, Circassian cheese, 1 egg. Mix everything well, then put it in a mold. Place pears and Gorgonzola cheese on top. Bake at 180°C until ready.
While the pie is in the oven, cook onion rings. It is better to take white onion, it has a mild taste.
Heat butter and olive oil in a frying pan, put onion rings and salt in there. Fry on low heat until the rings get transparent, golden.
Remove the pie from the oven and lay out the onion rings and fresh thyme on top.
