The recipe is vEry simple, but I give it to you for a reason. Once, when I was cooking breakfast, I aimed to sprinkle my brusquettes with parsley, but found none. I found some mint however. I decided to add mint instead, and to my huge astonishment, I discovered the perfect ingredient to combine with fish and tomatoes. So, be sure to try the brusquettes with mint.

Method of cooking

Cut and slightly brown the ciabatta on a dry non-stick pan.

Cut cherry tomatoes and season with olive oil, salt, pepper, dried oregano, and balsamic vinegar.

Spread on ciabatta slices.

Put smoked trout or lightly salted salmon on top.

Add a little feta cheese and chopped mint on top.

Be sure to cook the brusquettes in this version.
