I know that everyone has their own recipe for zucchini pancakes, but what is a food blog without them. This is probably the most popular zucchini dish here in Ukraine. When the season begins, it is served everywhere in cafes, restaurants, cooked at home, and it is wonderful. Young vegetables are very tasty and healthy.

Method of cooking

Grate the washed zucchinis in a bowl, use a fine grater as you use for carrots.

Squeeze out the excess liquid from grated zucchinis, the less liquid, the less flour you need to add.

Grate carrots and onions, finely chop greens and add to zucchinis

Add an egg, flour, salt and pepper. Mix well with a fork.

Fry in olive oil on both sides, spreading with a spoon on the pan. 

Serve with sour cream or Greek yogurt.
