Chickpeas stew with vegetables

I always have canned chickpeas and canned tomatoes in their own juice at my home. I restock every time I shop. If I need to prepare lunch or dinner and don’t have time at all, these cans come in handy.
I did not think that there would be such a request on my Instagram blog for this particular dish and recipe. Now there is a war in Ukraine and many people cook only from canned food, and there are always vegetables at the local market. Chickpeas can be replaced with beans.
You can add sausages or fried brisket to chickpeas with vegetables, if you want, so the dish would be more filling.
Ingredients
- 1 can of canned chickpeas
- 1 can of tomatoes in their own juice
- 2 medium carrots
- 1 onion
- 2 cloves of garlic
- Salt and pepper to taste
- 0.5 tsp of smoked paprika
- 0.5 tsp Herbs de Provence
- 200 g of brisket or sausages as desired
- Olive oil
- Lavash (Armenian flatbread) and fresh herbs for serving

Method of cooking
Heat olive oil in a pan. If you are going to do it with the brisket, you need to fry it now.
Add diced onions and carrots, garlic to brisket or sausages, fry for 2-3 minutes on medium heat.
Drain the liquid from the chickpeas and add to the vegetables, immediately add the canned tomatoes. Rinse the jar from tomatoes with water and add it to the chickpeas.
Add all the spices. Simmer over low heat until the sauce thickens, and the excess liquid evaporates for 10-15 minutes.
Sprinkle with fresh herbs, green onions.
Lavash, sour cream, green salad are perfect for such dish and will add freshness.
If you are cooking without meat, you can serve it with avocado.
