Chicken liver with baked beets and yogurt sauce

There are some dishes that deserve a second chance. At home I frequesntly observed liver fried in flour, but with time the flour became soft and tasted bad.
But my recipe is totally different, so I am positive you will cook this liver very often. You can cook an interesting lunch dish with very simple ingredients and unique serving.
ngredients
- 1 kg chicken liver
- 1 onion
- 2-3 stalks of green onions
- Salt and pepper to taste
- 1 tbsp soy sauce
- Olive oil for greasing
- Half a chili pepper
- 0.5 tsp of dry oregano
- 3-4 sun-dried tomatoes or cherry tomatoes
- 4-5 young beetroots
For sauce
- 150 gr Greek yogurt
- 50 gr feta cheese
- 1 tbsp olive oil
- 1 tsp lemon juice
- Grounded black pepper
- Smoked paprika

Method
Wash the liver. Heat olive oil on a pan and place there the liver. Fry on both sides on medium heat till golden crust. Season with salt and pepper.
Add chopped onion, soy sauce, oregano, chopped tomatoes, chili pepper, just a little water. Simmer under the lid till cooked for 15-20 minutes. Remove the lid and evaporate all the liquid that has formed. Sprinkle with green onions and parsley.
Cut the beets into four parts, season with salt and pepper, drizzle with olive oil and sprinkle with balsamic vinegar.
Bake for 20-30 minutes in the oven. If the beets are not young, pre-boil until almost ready.
Mix all sauce ingredients.
Put the liver on pita bread. Add yogurt sauce. Serve with baked beets.
