When you marinate eggplants in a blend of Cajun spices, you’ll create a dish that’s incredibly aromatic and bursting with flavor. Try serving these spicy eggplant strips in warm pita bread alongside a cooling cheese-yogurt sauce for a truly delectable treat.
Ingredients
- 2 large eggplants
- 3-4 tbsp olive oil
- Salt and pepper to taste
- 3 tsp Cajun spice mix
- 1 tsp sweet paprika
- 3 tsp tomato paste

Method of cooking
Wash the eggplants and cut them according to the principle of french fries, only in thicker pieces.
In a large bowl, mix tomato paste, olive oil, spices, and salt.
Carefully roll the eggplant pieces in the marinade so that each piece is well greased.
Place the eggplants on a baking sheet lined with baking paper.
Bake at 200°C for 20 minutes.
Prepare the sauce. Mix feta cheese, yogurt, olive oil, lemon juice, and season. Add chopped cilantro on top.
Wrap the finished eggplants in pita bread, add sauce inside and shake with cilantro.
Optionally, you can add fresh vegetables, tomatoes, bell pepper, carrots to the eggplants.
