I call it a weekend-dish. It’s very simple, but delicious, fast to cook, and you can do it with your family members.
1 steak will be enough for 2 people, but if there are more of you, add season vegetables. I cooked it in autumn, so it includes pumpkin and eggplant. If it is summer or spring, add young carrots, zucchini, cauliflower. Place everything on a baking sheet and into the oven.
Ingredients
- 1 salmon steak
- 1 large eggplant
- 1 large red onion
- 0.5 head of broccoli
- A quarter of a sweet pumpkin
- 1 head of garlic
- 2-3 sprigs of thyme
- Salt, pepper to taste
- 1 tsp soy sauce
- 1 tbsp lemon juice
- 3 tbsp olive oil
- Cranberry berries
- Greens for serving

Method
Prepare the fish: wash, dry, season with lemon juice, salt, pepper, soy sauce, add sprigs of thyme.
Place the washed and chopped vegetables on a baking sheet lined with baking parchment.
Drizzle the vegetables with olive oil and season. Mix with your hands so that they are well covered in olive oil. Place the salmon steak on top.
