Perhaps the meringue roll is the most popular dessert of the spring and summer season. And it is not surprising, because it is easy and quick to prepare. Just what you need on hot summer days. And in the evening, you can sit on the veranda or balcony and enjoy a cold, aromatic meringue roll.

I advise you not to store meringue desserts for a long time, it is better for one, maximum two days.


To prepare the roll, we will use French meringue, fresh strawberries and mascarpone cream. You can choose any seasonal berries.

Method of cooking

1 - ingredients

Place room temperature proteins in the bowl of a mixer. It is better to separate the whites when the eggs are cold and leave them at room temperature. 

Beat until the egg whites become foamy. Then increase the speed of the mixer and start sprinkling sugar. 

Beat until all the sugar dissolves. If you rub the meringue between your fingers, you won’t feel any grains. The meringue should hold its shape well, be smooth and stable.

Place on a baking sheet lined with parchment and flatten into a rectangle. It is better not to the edges of the form. Sprinkle almond petals or nuts on top.

Bake for 30 minutes at 160.

Turn over to the parchment. We will have the side with almonds below.

Prepare the cream.


Place mascarpone, cream, powder and vanilla extract in a large bowl.

Beat for 5-7 minutes. Refrigerate until use.

Spread the cream on the meringue and level it with a spatula. Part of the cream can be left for decoration. Spread fresh strawberries.

Carefully, helping yourself with parchment, wrap the roll and leave it in the refrigerator to stabilize for 5-8 hours.
