Toast the bread in a pan with a non-stick coating until golden brown.

Cut the avocado into thin strips, season and sprinkle with lemon juice.

Prepare a delicate omelette. Mix eggs, milk, salt. Pour into a heated pan with olive oil. Cook the omelet over low heat and stir continuously with a silicone spatula. The main thing is not to overdo it, but to remove it at the moment when the omelette is still tender.

Place the avocado on one side of the bread, and the omelette on the other. Sprinkle with a pinch of smoked paprika and greens.
