You may have noticed that some baking recipes use baking soda and baking powder simultaneously. These two components act at different speeds: soda acts immediately at the beginning of the baking process, and baking powder afterward.
In the recipe for the Tropic cake, there is lemon juice and fruit puree, so baking soda will work better here and fluff up the batter faster. You do not need to extinguish the soda. Otherwise, you will release all the bubbles from the reaction with the acid into the air. Acid is always present in the batter, and this reaction will occur due to the dairy products in it.
Ingredients
- 170 g of vegetable oil
- 135 g of sugar
- 2 eggs
- Zest of one lemon
- 1 tbsp. lemon juice
- 200 g of flour
- 0.5 tsp of baking soda
- 10 g of baking powder
- Salt
- 170 g of Greek yogurt
- 0.5 tbsp. of mango and passion fruit puree

Method of cooking
Sift the dry ingredients.
Mix oil and sugar with a mixer in a large bowl. Add eggs, zest, and lemon juice. Beat well.
Add dry ingredients, and mix with a whisk. In the end, add yogurt and puree. Stir.
Grease a 24×10 cm baking dish with oil and cover it with parchment paper.

- 70 g of cream 33%
- 50 g of powdered sugar
- 100 g of mango and passion fruit puree for decoration
