Almond glaze
Usually, almond glaze is used to cover panettone before baking them. The glaze caramelizes in the oven, so as a result, we get a crispy almond crust. This crust serves as a great decoration and adds extra texture, as well as diversifies the product with nut taste.
Almond glaze can be used to decorate Paska bread. It is a great decision if you don’t want to think about how to decorate your Paskas.
The recipe is for 4-5 Paskas

- 90 gr sugar
- 50 gr corn starch
- 50 gr almond flour
- 60 gr egg whites

Method of cooking
Make meringue from egg whites and sugar. Whip the egg whites until foam is formed. Increase the speed of the mixer and gradually add sugar. Whip until the sugar dissolves and the meringue becomes smooth and shiny.
Using a silicone spatula, carefully add the cornstarch and almond flour.
Transfer the mass to a pastry bag.
